I have been struggling to get the page numbers to start after the contents page without messing the page setting 9which has a knock on to booklet printing and pagination). I found this really useful tutorial:

The trick is to turn on Absolute page number in preferneces (which this tutorial doesnt mention)
Then in the pages pallet with all pages selected turn off both the allow pages and spread to shuffle and then select the page you want to start at in the pages pallet menu. Go to numbering and sections options and enter page 1 in the start page numbers at.
Tips on page numbering
This in fact didnt sort out the pagination out but this tutorial did:
Basically you have to create a separate section called A for the un-numbered pages so that Indesign does not think you have two pages number ones etc.
